Ingredients

  • 500 g Chicken breasts
  • 1 red onion
  • 1 red pepper
  • 1 yellow pepper
  • 2 garlic cloves, chopped
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp cajun seasoning
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp olive oil

Instructions

1.

To a large bowl, add your chicken breasts, red onion, peppers and seasoning, tingly teds and drizzle of oil. Give it a good mix, coating your vegetables and chicken in the seasoning and Ted’s.

Heat a large frying pan on medium heat with a drizzle of oil and add your marinated chicken breasts. Fry until golden brown all over and cook through completely and remove from the pan.

Add your vegetables to the pan and fry gently until softened. While your vegetables cook, shred the cooked chicken and add back into the pan. Add in a generous squeeze of Tingly Ted’s, chicken stock and chopped tomatoes. Bring to a simmer and cook until the sauce has reduced

Once you’re ready to serve, place a tortilla in a hot pan, sprinkle with grated mozzarella then top one half with the chicken mixture and fold the tortilla to make a taco. Flip and cook on both sides until the cheese is melted and the tortilla is crisp and golden brown. Serve with extra Tingly Ted’s and enjoy!
